Natural sweetness of sweet potato and the dressing goes really well.
4~6 servings
Ingredients :
- 3 cups Sweet potato/yam, peeled and diced
- 1 cup Red bell pepper, cubed
- 1/2 cups Chives, parsley or cilantro, chopped
- 2~3 tbsp Olive oil
- 1 tbsp Dried minced onion
- 3~4 tbsp Lemon juice
- Salt & pepper to season
*1 cup = 250ml
- Steam or bake cubed sweet potatoes until it gets tender. Cool.
- In a mixing bowl, mix olive oil, minced onion, lemon juice, a pinch of salt and pepper well.
- Add sweet potato, bell pepper and chives (or alternative) and toss. Taste and add salt & pepper as needed.
- Cover and keep refrigerated for a few hours before serving.
