Sweet Potato Salad

Natural sweetness of sweet potato and the dressing goes really well.

4~6 servings

Ingredients :

  • 3 cups Sweet potato/yam, peeled and diced
  • 1 cup Red bell pepper, cubed
  • 1/2 cups Chives, parsley or cilantro, chopped
  • 2~3 tbsp Olive oil
  • 1 tbsp Dried minced onion
  • 3~4 tbsp Lemon juice
  • Salt & pepper to season

*1 cup = 250ml

  1. Steam or bake cubed sweet potatoes until it gets tender. Cool.
  2. In a mixing bowl, mix olive oil, minced onion, lemon juice, a pinch of salt and pepper well.
  3. Add sweet potato, bell pepper and chives (or alternative) and toss. Taste and add salt & pepper as needed.
  4. Cover and keep refrigerated for a few hours before serving.
